Nanny's Recipes, First Wave

So, I've finally posted the first wave of Nanny's recipes. It's entirely desserts, because, well, I was posting my "Dessert" folder. There are still many more dessert recipes, as well as appetizers and entrees, to be posted. I have more in digital form that I just haven't gotten to posting yet, and many, many more that I have not managed to get on my computer. It's slow-going to get through them all, since many are hard to read due to being timeworn, and others are just difficult to decipher as an actual recipe.

But here you go! This is definitely a good place to start. Want to pick just one of Nanny's recipes posted so far? I suggest starting with the peanut butter balls or the pecan pie. Those were BIG family favorites.

Zucchini Bread

3 C all purpose flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
2 tsp cinnamon
3/4 C chopped nuts
3 eggs
2 C sugar
1 C oil
2 tsp vanilla
2 C coarsely shredded zucchini
1 8z can crushed pineapple, drained

Combine flour, baking soda, salt, baking powder, cinnamon, and nuts. Set aside.

Beat eggs slightly in large mixing bowl. Add flour, oil and vanilla. Beat until creamy.

Stir in zucchini and pineapple. Then add dry ingredients. Stir until flour is just moist.

Bake in loaf pan  at 350F for 1 hour. Cool 10 minutes then remove from pan.

Pineapple Icing

1 can crushed pineapple
1 1/2 C sugar
2 tbsp flour
2 oranges, juiced

Mix ingredients and cook over medium heat until it coats the back of a spoon.

Pineapple Cake

1 box pineapple supreme cake mix

Prepare according to box directions, using 1/2 C of oil instead of 1/3 C. Bake as 4 layers.


---ICING---
1 C white sugar
1 C sour cream
2 small cans crushed pineapple, drained (but not completely)
1 8oz container Cool Whip

Mix all ingredients together. Use to frost cooled cake.

Picnic Cookies

1 C shortening
1 C white sugar
1 C brown sugar

Cream together above ingredients. Add in two eggs and mix.

2 C flour
2 C rolled oats
2 C flake cereal
1 C coconut
1 tsp baking soda
1 tsp salt
1 tsp vanilla

Add above ingredients to creamed sugar mixture. Make into balls, then flatten out. Bake for 12 minutes at 375F.

Pecan Pie

1 cup KARO dark corn syrup
3 eggs
1 cup sugar
2 tbsp. butter, melted
1 tsp. vanilla
1/8 tsp. salt
1 cup pecans, halved or chopped
1 unbaked 9-inch pastry shell

Mix together first 6 ingredients then stir in pecans. Pour into pastry shell. Bake in 400F oven 15 minutes. Reduce heat to 350F and bake 30-35 minutes longer. Outer edge of filling should be set, center slightly soft.

Peanut Butter Icing

Before pouring icing over cake, be sure to poke holes in the cake, so that the icing has a place to go. If you don't, it will go down the sides of the cake and underneath it, leaving you with an upside down cake.

2 cups sugar
1 stick butter
1 small can evaporated milk
1 tsp. vanilla
3 heaping tbsp. creamy or crunchy peanut butter



In a medium sauce pan, combine sugar, butter and evaporated milk; stir to mix well. Bring mixture to a boil, stirring constantly; boil 2 minutes, or to softball stage on candy thermometer. Remove from heat. Add vanilla and peanut butter and stir vigorously. Pour icing over yellow sheet cake. Let sit to allow icing to harden.

Peanut Butter Balls - My FAVORITE Nanny Confection!

1 C graham crackers, crushed
1 box powdered sugar
2 sticks butter
1 lb peanut butter

Mix all together and roll into small balls. Place on cookie sheet until cold. Dip in melted chocolate.

Orange Slice Cake

1 cup butter
2 cups sugar
4 eggs
1 can flaked coconut
1 lb. dates (chopped)
3 1/2 cups flour
1 tbsp. baking soda
1/2 cup buttermilk
1 lb. orange slices (chopped)
2 cups pecans (chopped)



Cream butter and sugar. Add eggs one at a time. Dissolve baking soda in milk and add to creamed mixture.

Put flour in bowl. Add dates, candy and nuts. Add mixture and coconut to creamed mixture.

Bake 250F for 2 1/2 hours.




GLAZE

1 cup fresh orange juice
2 cups powdered sugar

Pour over cake while hot.

No Crust Coconut Pie

3 eggs
1/4 C flour, sifted
1 C sugar
1 tsp vanilla
1/2 stick butter, melted
1 C milk
1 C coconut

Combine dry ingredients. Mix wet ingredients. Stir everything together. Pour into greased, floured pie dish. Bake.

New Orleans Fruit Cake

2 lb dates, cut in quarters
1 C cherries, cut in halves
1 lb pecan halves
---
1 C flour, sifted
1 C sugar
1/2 tsp baking powder
1/2 tsp salt

Combine above ingredients. Put over fruit and nuts.

4 eggs
2 tsp vanilla

Add wet ingredients to flour/fruit mixture.

Bake at 350F for 1 hour 45 minutes.

Nectar Cake

1 box lemon supreme cake mix
1/2 C sugar
1/2 C oil
4 eggs
1 C apricot nectar

Combine all ingredients. Bake in tube pan at 350F for 50 minutes.

Mix 2 cups sifted powdered sugar with 1/2 C of fresh lemon juice. Pour over cake as soon as removed from oven. Let cool in pan.

Divinity

2 C sugar
1/2 C water
1/8 tsp salt

Cook to soft ball stage.

Add in small jar marshmallow cream, 1 tsp vanilla, and 2 C coarsely

chopped pecans.

Drop onto wax paper and let cool.

Fresh Apple Cake

1 C butter
2 C sugar
4 C diced apples
2 eggs
1 tsp baking soda
3 tsp baking powder
1/2 tsp salt
1 C raisens
1 C chopped pecans
2 C flour

---FILLING---
1 small can evaporated milk
3/4 C sugar
1 egg
1 tsp flour

Cook until thickened. Add 1 C coconut and spread on cake.

Date and Nut Bread

2 C apple juice
2 C chopped, pitted dates
2 C sugar
2/3 C butter, softened
2 eggs
3 C flour, sifted
2 tsp baking soda
1/8 tsp salt
2 C chopped nuts
1 tsp vanilla

Bring apple juice to boil. Pour over dates and set aside.

Cream butter and sugar together. Add eggs and mix well.

Sift flour, baking soda and salt together. Add to creamed mixture alternately with vanilla and water. Add date mixture and nuts.

Prepare 2 loaf pants. Divide loaf between pans. Bake in 275F oven for 1 hour and 45 minutes.

Dang Good Pie

Makes 2 Pies

9 tbsp butter, melted
4 eggs
4 1/2 tbsp flour
2 1/4 C sugar
1 large can crushed pineapple, drained
1 can coconut

Beat eggs. Add sugar and flour, mix. Add melted butter. Add pineapple and coconut.

Bake pie shells until light brown and then pour ingredients in pie shells.

Bake for 1 hour at 350F or until set and brown.

Cream Cheese Pound Cake

3 C sugar
3 sticks butter
8 oz cream cheese
3 C cake flour
2 tsp vanilla extract
6 eggs

Cream butter and cream cheese. Add sugar and mix. Add flour and eggs alternately (start with flour and end with flour).

Pour in prepared cake pan. Bake at 300F for 1 hour 30 minutes.

Coconut Pound Cake

2 sticks butter
2/3 C crisco
3 C sugar
5 large eggs
1 C sweet milk
3 C plain flour
1 tsp baking powder
1/4 tsp salt
1 tsp coconut extract
1 tsp butter flavor
1 can coconut

Cream butter and crisco. Gradually add sugar. Add eggs, one at a time.

Add alternately milk and flour mixture (flour, baking powder, salt). Add flavoring and coconut.

Bake in tube pan at 300F for 1 hour 30 minutes.

Coca Cola Cake

---CAKE---
2 C flour
2 C sugar
1 1/2 C small marshmallows
1 C Coca-Cola
1/2 C buttermilk
1/2 C butter
1/2 C oil
1 tsp baking soda
1 tsp vanilla
3 tbsp cocoa
2 eggs, beaten

Sift together flour and sugar; stir in marshmallows.

In sauce pan, combine butter, oil, Coca-Cola, and cocoa. Heat until butter melts. Pour over flour mixture.

Stir in baking soda, eggs, and buttermilk. Add vanilla. Pour in cake pan and bake 45 minutes to 1 hour at 350F.

---FROSTING---
3 tbsp cocoa
1/2 C butter
6 tbsp Coca-Cola
1 C chopped pecans
1 box powdered sugar

Put butter, cocoa, and Coca-Cola in a sauce pan and bring to a boil. Remove from heat and add powdered sugar and pecans. Use to frost cake.

Cherry Salad

1 package cherry Jell-O
1 package cream cheese
1 can drained black, sweet pitted cherries
1/3 C pecans

Dissolve dry jell-O and cream cheese. Add 1 C boiling water. Add 1 C cherry juice and chopped pecans. Refrigerate overnight.

Butter Pecan Cookies

1 C butter
3/4 C light brown sugar
3/4 C white sugar
2 eggs
1 tsp vanilla
2 1/4 C flour, sifted
1 tsp baking soda
1/2 tsp salt
1 C chopped pecans

Cream butter and sugars until light and fluffy. Beat in eggs and vanilla.

Combine dry ingredients. Add to creamed sugar mixture and mix well. Stir in nuts.

Drop from spoon onto ungreased cookie sheet. Bake at 350F for approximately 10 minutes.

Basic Creme Pie (And 5 Variations)

Basic Creme Pie (And 5 variations) - Makes 2 pies

---BASIC---
1 1/4 C sugar
5 egg yolks
1/2 C flour, sifted
1/2 tsp salt
1 tsp vanilla
3 C hot milk
3 tbsp butter

Combine sugar, flour, salt, milk and egg yolks in top part of a double boiler, stirring constantly. Allow to thicken.

Add vanilla and butter.

Pour into baked pie shell. Top with meringue and brown.

---BANANA CREME---
Slice bananas over bottome of pie crust. Pour custard mixture over it. Complete as directed above.

---BUTTERSCOTCH---
Instead of white sugar, add 1 1/2 C brown sugar. Increase butter to 6 tbsp.

---CHOCOLATE---
Increase sugar to 1 1/2 C. Add 6 tbsp cocoa powder.

---PINEAPPLE---
Add drained, crushed pineapple.

---COCONUT---
Add 1 can coconut.

---MERINGUE---
Beat egg whites with 2 tbsp water until stiff.

1 tbsp cornstarch
1/2 C water

Cook water in double boiler until thick. Cool. Add to beaten egg whites.
