Nanny's Recipes, First Wave

So, I've finally posted the first wave of Nanny's recipes. It's entirely desserts, because, well, I was posting my "Dessert" folder. There are still many more dessert recipes, as well as appetizers and entrees, to be posted. I have more in digital form that I just haven't gotten to posting yet, and many, many more that I have not managed to get on my computer. It's slow-going to get through them all, since many are hard to read due to being timeworn, and others are just difficult to decipher as an actual recipe.

But here you go! This is definitely a good place to start. Want to pick just one of Nanny's recipes posted so far? I suggest starting with the peanut butter balls or the pecan pie. Those were BIG family favorites.

Zucchini Bread

3 C all purpose flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
2 tsp cinnamon
3/4 C chopped nuts
3 eggs
2 C sugar
1 C oil
2 tsp vanilla
2 C coarsely shredded zucchini
1 8z can crushed pineapple, drained

Combine flour, baking soda, salt, baking powder, cinnamon, and nuts. Set aside.

Beat eggs slightly in large mixing bowl. Add flour, oil and vanilla. Beat until creamy.

Stir in zucchini and pineapple. Then add dry ingredients. Stir until flour is just moist.

Bake in loaf pan  at 350F for 1 hour. Cool 10 minutes then remove from pan.

Pineapple Icing

1 can crushed pineapple
1 1/2 C sugar
2 tbsp flour
2 oranges, juiced

Mix ingredients and cook over medium heat until it coats the back of a spoon.

Pineapple Cake

1 box pineapple supreme cake mix

Prepare according to box directions, using 1/2 C of oil instead of 1/3 C. Bake as 4 layers.


---ICING---
1 C white sugar
1 C sour cream
2 small cans crushed pineapple, drained (but not completely)
1 8oz container Cool Whip

Mix all ingredients together. Use to frost cooled cake.

Picnic Cookies

1 C shortening
1 C white sugar
1 C brown sugar

Cream together above ingredients. Add in two eggs and mix.

2 C flour
2 C rolled oats
2 C flake cereal
1 C coconut
1 tsp baking soda
1 tsp salt
1 tsp vanilla

Add above ingredients to creamed sugar mixture. Make into balls, then flatten out. Bake for 12 minutes at 375F.

Pecan Pie

1 cup KARO dark corn syrup
3 eggs
1 cup sugar
2 tbsp. butter, melted
1 tsp. vanilla
1/8 tsp. salt
1 cup pecans, halved or chopped
1 unbaked 9-inch pastry shell

Mix together first 6 ingredients then stir in pecans. Pour into pastry shell. Bake in 400F oven 15 minutes. Reduce heat to 350F and bake 30-35 minutes longer. Outer edge of filling should be set, center slightly soft.

Peanut Butter Icing

Before pouring icing over cake, be sure to poke holes in the cake, so that the icing has a place to go. If you don't, it will go down the sides of the cake and underneath it, leaving you with an upside down cake.

2 cups sugar
1 stick butter
1 small can evaporated milk
1 tsp. vanilla
3 heaping tbsp. creamy or crunchy peanut butter



In a medium sauce pan, combine sugar, butter and evaporated milk; stir to mix well. Bring mixture to a boil, stirring constantly; boil 2 minutes, or to softball stage on candy thermometer. Remove from heat. Add vanilla and peanut butter and stir vigorously. Pour icing over yellow sheet cake. Let sit to allow icing to harden.
